In the bowl of a food processor, add in the feta, drained roasted red bell peppers, garlic, lemon juice, and olive oil.
Process on high until the mixture comes together. Rove the lid and scrape down the side of the bowl, and process again until smooth. Add more olive oil if needed to achieve your desired consistency.
Serve with sliced vegetables or pita chips.
Store in the refrigerator for up to one week.
