In a mixing glass, muddle the apple pieces, then add Calvados, lemon juice, honey syrup, and St. Germain. Add ice and shake.
Add fresh ice to a snifter glass, then strain the mixture over it.
Using the back of a bar spoon, top with ¼ oz of port, and slowly pour to create the float. Tip: The darker the port, the greater the color contrast in the float.
