Salted Carmel (N)ice Cream

Ingredients

  • 1 cup cottage cheese
  • tbsp maple syrup
  • 1 tsp vanilla extract
  • tsp sea salt
  • 3 Medjool dates, pitted and lightly chopped

Instructions

  • In a small food processor, add the cottage cheese, maple syrup, vanilla extract, and sea salt. Process until smooth.
  • Remove the lid and add the pitted and lightly chopped Medjool dates. 
  • Cover with the food processor lid and lightly pulse to incorporate the dates into the mixture.
  • Transfer the mixture to a freezer-safe container and let it freeze for 1 hour. Then, stir it to prevent icing. Freeze for one more hour, stir, and serve. 
  • If making ahead, follow the above instructions and remove the dish from the freezer. Let it rest at room temperature for 20 minutes before scooping and serving.
