Spaghetti Pasta Salad

Ingredients

Pasta Salad Ingredients 
  • 16 oz spaghetti, cooked al dente and cooled
  • 1 cup cherry tomatoes, halved
  • ½ English cucumber, seeded and thinly sliced 
  • ¼ cup red onion, thinly sliced
  • ¼ cup sliced pitted kalamata olives, chopped
  • 5 oz feta cheese crumbled, more to taste
  • 2 tbsp fresh parsley
  • 1 tbsp fresh basil, chopped
Vinaigrette Dressing
  • cup olive oil
  • ¼ cup red wine vinegar
  • 1 small garlic clove, minced
  • 1 tsp oregano
  • 1 tsp honey
Garnish
  • Fresh basil leaves
  • Feta cheese
  • Extra kalamata olives 

Instructions

  • Add all the pasta salad ingredients in a large mixing bowl and set aside.
  • In a small mixing bowl, combine all the dressing ingredients and mix well.
  • Pour dressing over the pasta salad ingredients, toss well, and garnish with additional fresh basil, feta cheese, and Kalamata olives.
