Vegetable Ceviche Salsa

Ingredients

Vegetable Ingredients
  • ¾ cup jicama, diced small
  • ¼ cup red onion, diced small
  • 1 jalapeño pepper, diced small 
  • 1 avocado, diced small
  • 4 mini peppers, diced small
  • ½ cup frozen corn, thawed
  • ¼ cup cilantro, finely chopped
For the Dressing
  • 2 large limes
  • 3 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • 6 tostadas
Garnish
  • Cilantro, chopped
  • Green onions, thinly sliced

Instructions

  • Mix the ingredients for the dressing and set aside.
  • Place all the vegetable ingredients for the ceviche in a bowl and pour the dressing on top; mix to evenly coat the vegetables and let rest for 15 – 30 minutes.
  • Add a spoonful of the vegetable mixture on each tostada and top with chopped cilantro and sliced green onions.
