Line a baking sheet with parchment paper.
Preheat oven to 400 degrees F.
Blot pickle slices with a paper towel to remove moisture.
On the parchment paper, divide the cheese into two mounds and create a rectangular shape for each. Make sure the cheese is covering the parchment well. You need even coverage so that when it bakes, it produces uniform “slices”.
Lay the pickles on top of the shredded cheese, about 3-4 slices on each of the rectangle-shaped cheese shapes.
Bake in the oven for 10-12 minutes or until the cheese has golden brown edges.
Let the wraps/bread cool completely before assembling your favorite sandwich.
