Herbed Feta Dip

Ingredients

  • 6 oz. feta
  • 1/2 cup fresh flat-leaf parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • 2 tbsp. fresh dill, finely chopped plus torn sprigs for serving
  • Kosher salt and freshly ground black pepper
  • olive oil, for drizzle

Instructions

  • Blend feta and a splash of water (we used about 1/8 cup) in a food processor.
  • Transfer to a medium bowl and stir in parsley, mint, and chopped dill; season with salt and pepper.
  • Drizzle with olive oil and top with dill sprigs.
  • Serve with cut vegetables, tortillas, or pita chips.
