I stopped by the TODAY show and showed them two recipes for a healthy + simple dinner that my family loves! The salmon recipe was one that came from one of you guys!! Last year, Women of Today reader Judy Evind kindly showed me this salmon dinner-hack with zero clean up, and I have been making it ever since! What I love about both of these recipes is that they are easy to make, are both done with five ingredients or less and taste delicious.
Baked Salmon with Dill
1 wild salmon filet
1/2 lemon, juiced
Salt and freshly ground black pepper, to taste
1. Preheat oven to 350°F.
2. Line a baking sheet with parchment paper. Rub the paper generously with butter. Lay the filet in the center and poke a few holes in the fish.
3. Drizzle the lemon juice on the filet, sprinkle with salt and pepper and lay dill springs across the top. Fold the parchment into a little packet and place the whole pan in the oven and bake 15-20 minutes.
Simple Sautéed Kale
2 tablespoons extra virgin olive oil
2 cloves garlic, thinly sliced
1 pinch crushed red pepper flakes
1 bunch kale, stems removed and sliced into thin ribbons
Salt, to taste
Freshly squeezed lemon juice (optional)
Add the olive oil to a large heavy skillet over high heat. Add the garlic and red pepper flakes and cook for about 30 seconds. Toss in the kale and continue to cook until crisp edges develop. Add salt to taste.
Drizzle with lemon juice, if using, and serve.
