Mashed Potato Cheddar Bites

Mashed potatoes with a twist!

Mashed Potato Cheddar Bites are that cozy meets playful side dish you pull out when you want something familiar, but a little more fun. Fluffy mashed potatoes get folded with sharp cheddar, sour cream, chives, and just enough Parmesan to create a golden, puffed bite with slightly crisp edges and a soft inside.

They bake up like tiny, savory souffles, warm, comforting, and irresistibly flavorful. Serve them with a dollop of sour cream if you want to lean into the indulgence, or let them shine all on their own as the kind of crowd pleasing treat everyone reaches for first.

Mashed Potato Cheddar Bites

Servings 6

Ingredients

  • cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 medium eggs, beaten
  • 1/3 cup sour cream
  • 1/4 cup all-purpose flour
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp chopped chives
  • 3/4 tsp Kosher salt
For serving
  • Sour cream (optional)

Instructions

  • Preheat oven to 375°F.
  • Lightly grease a 12-cup muffin pan with olive oil spray or butter.
  • In a large mixing bowl, combine the mashed potatoes, shredded cheese, beaten eggs, sour cream, flour, Parmesan cheese, chopped chives, and salt. Stir until well blended.
  • Spoon the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  • Bake for 35–40 minutes, or until the tops are golden brown and the cheese puffs are set.
  • Let the cheese puffs cool in the pan for 5 minutes, then carefully remove them with a soft-sided spatula by loosening the puffs from the edges of the muffin pan.
  • Serve warm on their own or with sour cream.
