Beat the summer heat with this refreshing salad!
Today, we’re sharing our Avocado Cucumber Salad, the perfect recipe for these hot summer days when you don’t want to use your oven or stove to cook.
Texture meets flavor with this recipe which combines crisp seasonal cucumbers with the creamy goodness of ripe avocados. With minimal ingredients and a quick assembly time, this salad is great for a light lunch or a side dish at your next barbecue.
Avocado Cucumber Salad
Ingredients
- 2 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- 1 tsp honey
- 2 English cucumbers or regular cucumbers, seeded and sliced
- 3-4 green onions, sliced green and white parts
- 2 tbsp cilantro, chopped
- ⅓ cup blueberries
- 2 large ripe avocados, pitted and sliced
- Salt and pepper
- Lime wedges
- Cilantro sprig
Instructions
- In a small bowl, combine the lime juice, olive oil, and honey. Whisk together and set aside.
- In a serving bowl, add the seeded and sliced cucumbers, green onion, cilantro, and blueberries.
- Pour dressing over the mixture and toss to combine. Season with salt and pepper.
- Add the sliced avocados and gently toss to combine.
- Garnish with a lime wedge and a sprig of cilantro.
- Serve immediately.
