Banana Chocolate Chunk Muffins

Banana Chocolate Chunk Muffins

Ingredients

  • 3 medium bananas, mashed (about 1 cup)  
  • 2 eggs
  • cup avocado oil
  • cup maple syrup  
  • 1 tsp vanilla extract  
  • cups oat flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda  
  • ¼ tsp salt
  • ½ cup chocolate chunks or chocolate chips

Instructions

  • Preheat the oven to 350°F and line a muffin pan with liners. 
  • In a large bowl, mash the bananas, then whisk in the eggs, avocado oil, maple syrup, and vanilla until smooth.  
  • In a separate bowl, whisk together the oat flour, cocoa powder, baking soda, and salt.  
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.  
  • Divide the batter evenly among the muffin liners.  
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.  
  • Allow to cool before serving. Enjoy!
