Blistered Tomatoes with Burrata and Basil

Servings 4

Ingredients

  • 2 cups grape tomatoes
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • Kosher salt
  • 2 burrata balls
  • 2 sprigs of basil
  • Crusty bread for serving

Instructions

  • Preheat oven to 400 degrees F.
  • Place grape tomatoes in a small baking dish.
  • Add the minced garlic and olive oil, then season with Kosher salt. Toss to coat.
  • Bake for 30 minutes or until tomatoes have blistered and begun to split.
  • Remove from the oven and top with the burrata balls. Using two forks, pull the burrata apart on top of the hot tomatoes.
  • Drizzle with a little olive oil and top with torn basil.
  • Serve immediately with your favorite crusty bread, or it can be served at room temperature.
