Kale Caesar Salad with Chickpea Croutons
Ingredients
- 2 bunches of kale
- ½ cup Caper Flower Vegan Caesar Dressing (recipe follows)
- ½ cup Chickpea Croutons (recipe follows)
- 1 tsp nutritional yeast, for sprinkling
- ½ cup roughly chopped kimchi
- 3 tbsp lemon juice (from about 2 lemons)
- 1½ tbsp Dijon mustard
- 3 tbsp nutritional yeast
- ¾ cups vegan mayonnaise
- 1 large garlic clove, crushed
- 1½ tbsp drained capers
- 1½ tbsp tamari or soy sauce
- ½ tbsp pure maple syrup
- 3 tbsp olive oil
- ½ tsp distilled or white wine vinegar
- 1 15 oz can chickpeas, rinsed, drained, and thoroughly dried
- 2 tbsp olive oil
- 2 tbsp Bae’s Spice Blend (recipe follows)
- Pinch of kosher salt and freshly ground black pepper to taste
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- ½ tbsp chili powder
- 2 tsp paprika, sweet or smoked
- 2 tsp ground turmeric
- 2 tsp onion powder
- 2 tsp garlic powder
- ½ tsp dried thyme
- ¼ tsp freshly ground black pepper
- ¼ tsp kosher salt
