But WOT is miso? Miso is a traditional Japanese seasoning! It’s a thick paste produced by fermenting soybeans with salt and kōji. Its taste can be described as a complex, savory, salty, sweet, and almost briny flavor that is extremely versatile.
The flavors in this recipe create a marinade and glaze that perfectly complements meat, poultry, and indulgent fatty fish like salmon and black cod. Whether you choose to marinate for an extended period or use it as a last-minute glaze, this recipe will surely be a staple.
Miso and Toasted Garlic Glaze or Marinade
Ingredients
- ½ cup white or yellow miso paste
- 3 tbsp chopped garlic
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 2 tbsp honey
- ½ tsp salt
- Cracked pepper to taste
Instructions
- Heat 2 tablespoons of olive oil over medium heat in a small skillet.
- Add chopped garlic to the hot oil and sauté until golden brown. Be careful not to burn the garlic, as it can become bitter. Once golden, remove from heat and set aside.
- In a mixing bowl, combine the toasted garlic with ½ cup miso paste, 3 tablespoons lemon juice, 2 tablespoons honey, cracked pepper to taste, and ½ teaspoon salt.
- *This can be stored in container for up to 2 weeks in fridge.*
- Brush the miso and toasted garlic marinade liberally on meat or fish while it is still hot, just before serving.
- For meat and poultry: Add 1-2 tablespoons of the marinade per pound of meat. Marinate for up to 24 hours in the refrigerator.
- For fish: Use 1-2 tablespoons of the marinade per pound of fish and marinate for up to 12 hours.
