Get ready to spice up your next barbecue with this Spicy Corn! This isn’t our typical lighter fare, but trust us—Opie’s BBQ Spicy Corn is one recipe worth the splurge.
A crowd-pleaser from Texas favorite Opie’s BBQ, it was recently highlighted on the Today Show with Hoda and Jenna by Camila herself. Loaded with smoky spice and rich flavors, this dish will add a bold kick to any cookout or dinner.
Opies BBQ Spicy Corn
Ingredients
- 2 8 oz blocks of cream cheese (cut into 8 pieces)
- 1 stick of butter (cubed)
- 4 15 oz. canned corn (drained)
- 1½ tsp coarse salt
- 1½ tsp black pepper
- ¾ tsp cayenne
- 1 4 oz can diced jalapenos (drained) **must be canned in water and NOT vinegar**
- 2 7 oz cans of green chilis
- 1½ cups milk (we used whole milk)
Instructions
- Preheat oven to 400 degrees F.
- Put the cubed butter in the bottom of a 9x13 baking dish. Put the cream cheese on top of the butter.
- Bake for 20 minutes or until the butter is melted and the cream cheese has softened.
- Add the corn, salt, black pepper, and cayenne and mix until well combined.
- Next, add the jalapenos and green chilis and mix.
- Add the milk and stir until well combined. The mixture will be liquidy but will thicken during baking.
- Bake for 40-45 minutes, stirring halfway through.
