Strawberry Feta Salad
Servings 4
Ingredients
Vinaigrette
- 2 tbsp champagne vinegar or white balsamic vinegar
- 6 oz extra virgin olive oil
- ¼ tsp honey
- ⅛ tsp salt
- ⅛ tsp fresh ground black pepper
Salad
- 16 oz bag of spring mix
Garnish
- 1 cup strawberries, sliced
- 4 oz feta, sliced or crumbled
Instructions
- Combine all the ingredients for the dressing. Use immediately or refrigerate until ready to serve.
- In a mixing bowl, add the spring mix and drizzle with the dressing, toss, and add more dressing if needed.
- Transfer the tossed spring mix to a platter and top with the sliced strawberries and feta cheese.
- Serve immediately.
