Vegetable Ceviche Salsa
Ingredients
- ¾ cup jicama, diced small
- ¼ cup red onion, diced small
- 1 jalapeño pepper, diced small
- 1 avocado, diced small
- 4 mini peppers, diced small
- ½ cup frozen corn, thawed
- ¼ cup cilantro, finely chopped
- 2 large limes
- 3 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic, minced
- 6 tostadas
- Cilantro, chopped
- Green onions, thinly sliced
Instructions
- Mix the ingredients for the dressing and set aside.
- Place all the vegetable ingredients for the ceviche in a bowl and pour the dressing on top; mix to evenly coat the vegetables and let rest for 15 – 30 minutes.
- Add a spoonful of the vegetable mixture on each tostada and top with chopped cilantro and sliced green onions.
