Pinwheel Beef Kababs are having a serious moment, and once you make them, you’ll completely understand why. These beautiful spirals of seasoned ground beef are packed with warm spices like smoked paprika, sumac, and garlic, then finished with a light mist of olive oil that crisps the edges into something golden and deeply savory.

They look impressive on the table, but the process is simple enough for a weeknight and special enough for a dinner party. Whether you’re serving them as a pick-up appetizer or the centerpiece of a full spread, they never fail to get people talking.

Pinwheel Beef Kabab

Ingredients

  • 1 lb ground beef
  • 1 tsp Kosher salt
  • tsp garlic powder
  • tsp onion powder
  • tsp smoked paprika
  • 1/2 tsp sumac
  • 1/2 tsp cayenne (optional)
  • 2 garlic cloves, minced
  • 1/2 cup fresh parsley, finely chopped
  • Olive oil spray
  • 4 6” flour tortillas
For serving
  • Easy Tzatziki 

Instructions

  • Add the ground beef, all the spices, and fresh, chopped parsley. 
  • Thoroughly combine, then refrigerate for 1-4 hours to let the flavors meld. 
  • Preheat oven to 400 degrees F.
  • Just divide the meat mixture among the 4 tortillas, then spread it to cover the entire surface of each tortilla in a thin layer. 
  • Roll up the tortilla and slice it into bite-sized pieces. Skewer each piece onto a skewer with the tortilla side sliding down the skewer first. 
  • Cover a sheet pan with parchment paper. Place the beef skewers on the parchment paper and spray with a little olive oil.
  • Bake in the 400-degree oven for 25 minutes. If there is liquid at the bottom, you can use it as a drizzle by spooning it over the skewers.  
  • Serve with our Easy Tzatziki.
