Summertime Peach Cake

A simple, sweet way to celebrate summer peaches!

There’s nothing quite like ripe, juicy peaches at the peak of summer, and our Summertime Peach Cake was made to let them shine. To make it a little more better for you, we cut the sugar in half so the natural sweetness of the fruit comes through in every bite, while a tender butter cake batter, made with pantry staples, a splash of vanilla, and a touch of sour cream, keeps things moist and rich without feeling heavy.

This easy peach cake comes together quickly, making it a go to dessert for warm weather gatherings, backyard dinners, or a simple weeknight treat. A light dusting of confectioners’ sugar adds the perfect finishing touch.

Summertime Peach Cake

Servings 6

Ingredients

  • 3/4 cup all-purpose flour 
  • tsp baking powder
  • 1/2 tsp  salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup room-temperature sour cream
  • 1 tbsp vanilla extract
  • 2 cups ripe peaches peeled, pitted, and sliced or chopped 
For Dusting
  • 1 tsp confectioners' sugar (optional)

Instructions

  • Preheat the oven to 350F. 
  • In an 8x8 baking pan, create a parchment paper sling. 
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt, and set aside.
  • In a large mixing bowl using a whisk, beat the butter until light and creamy. 
  • Add the sugar and whisk until light and fluffy, for about 2 minutes. 
  • Add the eggs one at a time, scraping down the bowl and whisking well after each addition. 
  • Whisk in the vanilla and then the sour cream.
  • Using a wooden spoon, gradually add the flour mixture just until combined. 
  • Fold in three-quarters of the peaches and spread the batter into the prepared baking pan. 
  • Arrange the remaining peaches on top. 
  • Bake for 45 minutes or until a wooden pick inserted into the center comes out clean.
  • Let cool for at least 30 minutes before serving and remove from the baking pan using the parchment paper sling. Plate and sprinkle with confectioners' sugar if desired.
