Breakfast just got a whole lot sweeter (but in a good way)!
Start your day with a nutritious boost and try our tasty Banana Chia Breakfast Cookies which pair perfectly with your morning yogurt or hot beverage. Unlike typical cookies, these breakfast treats are naturally sweetened with ripe bananas and a hint of maple syrup, providing a better for you alternative to other sweet breakfast options.
Packed with rolled oats and chia seeds (a superfood), they are packed with an extra dose of nutrition. To get the right texture with these cookies, we suggest you let the batter rest in the refrigerator for 10 minutes before baking.
Banana Chia Breakfast Cookies
Ingredients
- 2 ripe bananas, mashed
- 1 large egg
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp vegetable oil or coconut oil, melted
- ½ cup all-purpose flour
- 1 cup old-fashioned oats, also known as rolled oats
- ½ cup pecans, ground or crushed
- 3 tbsp black chia seeds
Instructions
- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment paper.
- In a mixing bowl, add the mashed bananas, egg, syrup, vanilla, and oil. Whisk well to combine.
- Add the flour, oats, pecans, and chia seeds. Stir well to incorporate all the ingredients.
- Place the bowl in the refrigerator for 10 minutes. This helps the cookie batter setup.
- Drop tablespoons of the batter onto the prepared baking sheet. If you prefer a flatter cookie, use a fork to flatten the cookies slightly. These cookies do not spread out during the baking process.
- Bake cookies for 15 minutes or until golden brown.
