Looking for a quick and easy way to enjoy leftover corned beef? Try this delicious recipe for our Crispy Reuben Sandwich that adds a new twist to a classic sandwich. Using a panini maker instead of a skillet yields a crispy texture without excess butter, making this recipe a healthier alternative to the traditional grilled sandwich.
Tip: For an even crisper sandwich, drain and press your sauerkraut before adding it to the sandwich. This will remove excess liquid and help the sandwich stay crispy.
Reuben Sandwich
Equipment
- Panini Maker
Ingredients
- 1 pat butter, softened
- 2 pieces of marble rye
- 3 thin slices of corned beef
- ⅓ cup sauerkraut, drained
- 2 slices of Swiss cheese
Instructions
- Preheat panini maker.
- Spread softened butter on one side of each slice of bread.
- Place one slice of bread, buttered side down on the panini maker. Top the bread with the corned beef, cheese, and drained sauerkraut. Lay the other slice of bread, buttered side up, on top and grill for about 5 minutes or until golden brown and crisp.
