Start your day with our Easy Blueberry Baked Oatmeal that combines the comforting flavors of oatmeal with a sweet burst of seasonal blueberries. This one-pot recipe comes together in just about 5 minutes, making it a perfect option for busy mornings.
WOT we love about this dish: Not only is it a wholesome breakfast, but it also doubles as a better for you blueberry cobbler. Just top it with a little frozen yogurt, and you’ve got a delicious, guilt-free dessert.

Easy Blueberry Baked Oatmeal
Equipment
- 10-Inch Deep Oval Baking Dish
Ingredients
- 2 cups steel cut or rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp sea salt
- 1 tsp vanilla
- ¼ cup maple syrup
- 1¾ cup milk or milk of choice
- 2 large eggs, whisked
- 12 oz fresh blueberries
- Drizzle of maple syrup
Instructions
- Preheat the oven to 375 degrees F.
- Grease a 10-inch-deep oval baking dish, we used avocado oil spray.
- To the baking dish, add the oats, baking powder, cinnamon, sea salt, vanilla, maple syrup, and 2 eggs whisked in the milk. Gently stir to combine.
- Top with the 12 ounces of blueberries.
- Bake for 30-35 minutes or until the top is golden brown and the middle is set.
- Serve warm with a drizzle of maple syrup.
