Dinners just got easier with our delicious Easy Weeknight Pizza! Using store-bought dough, you can whip up a white pizza with ingredients you likely already have or swap in your favorite red sauce for a classic twist.
For those looking to make your own dough, we have also included our WOT-tested recipe below, which can even be prepared ahead and frozen for ultimate convenience.
Easy Weeknight Pizza
Equipment
- 12x18 Sheet Pan
Ingredients
- 1 lb pizza dough (store-bought or homemade, recipe below)
- ¼ cup extra virgin olive oil, plus extra for drizzle
- 2 cloves garlic, minced
- ¼ tsp dried oregano
- Pinch of red pepper flakes (optional)
- 2 tomatoes, 12 slices, juice shaken from each slice
- ¼ cup thinly sliced red onion (optional)
- 1½ cup mozzarella cheese
- Fresh basil leaves (optional)
Instructions
- Preheat oven to 450 degrees F.
- Combine the extra virgin olive oil, minced garlic, oregano, and optional red pepper flakes in a bowl and set aside.
- Drizzle extra virgin olive oil on the bottom of a sheet pan. Knead the dough to cover most of the pan.
- Once the dough is kneaded and spread to cover most of the sheet pan, use a spoon to evenly distribute and spread the olive oil and garlic mixture on top of the dough.
- *Very importantly, once the tomatoes are sliced, shake out the juice (some seeds might come out too) from the tomato slices and evenly place them on the dough. This will prevent a soggy crust.
- If using red onion, take the thinly sliced red onions and evenly distribute them on top of the dough.
- Bake the pizza in a preheated 450-degree oven for about 10-12 minutes or until the dough is golden brown.
- Remove the pizza from the oven and sprinkle the mozzarella on top. Return to the oven for only 2-3 minutes or until the cheese is melted.
Homemade Pizza Dough
Ingredients
- 1 packet of instant yeast such as Rapid Rise
- 2-2¼ cups all-purpose
- 1½ tsp turbinado sugar
- ¼ tsp salt
- 2 tbsp extra virgin olive oil, and extra for bowl drizzle
- ¾ cup warm water up to 110 degrees
Instructions
- In a large bowl, add the packet of instant yeast, 1 cup of flour, sugar, and salt, then the extra virgin olive oil and warm water. Using a spatula, stir well to combine the ingredients.
- Gradually add another 1 cup of flour. The dough should begin to pull away from the sides of the bowl and form a soft, slightly sticky ball.
- If the dough is too sticky, add the additional flour to form a soft dough ball. More flour might be needed. Use your judgment until you have a nice dough ball that is slightly sticky.
- In another large bowl, drizzle about one tablespoon of extra virgin olive oil. Place the pizza dough in the bowl and flip to coat both sides with olive oil. Form a ball and cover with plastic wrap.
- Let the dough rise at room temperature for about 30 minutes or until doubled in size.
- After the dough has risen, it can be baked or frozen at this point.
