Made with just four simple ingredients, they’re rich, chewy, and naturally sweet—no oven required!
The combo of rich peanut butter and naturally sweet coconut makes them the perfect balance of indulgence and better-for-you snacking. Keep a batch in the freezer for a quick grab-and-go treat whenever you need a little something sweet!
Four Ingredient Peanut Butter Coconut Freezer Cookies
Ingredients
- ⅔ cup natural peanut butter
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1 cup unsweetened shredded coconut flakes
Instructions
- Place the peanut butter and coconut oil in a medium microwaveable bowl. Microwave for 30 seconds.
- Stir to combine; add the maple syrup, and stir again.
- Add the unsweetened shredded coconut flakes and mix until evenly coated.
- Spoon the mixture on a parchment-lined baking sheet. Make each cookie about 2” in diameter.
- Place in the freezer for 30 minutes. The cookies can then be transferred to an airtight container and stored in the freezer until ready to enjoy.
