Goat cheese stuffed bacon-wrapped dates are a timeless appetizer that never fails to impress. Better yet, they’re incredibly easy to make with just a handful of ingredients.

The natural caramel-like sweetness of Medjool dates pairs beautifully with the salty, smoky bacon, and the goat cheese adds a tangy creaminess.

Goat Cheese Stuffed Bacon Wrapped Dates

Ingredients

  • 24 large Medjool dates, pitted
  • 4 oz goat cheese (softened)
  • 12 slices of bacon, cut in half
  • Toothpicks (soaked in water for 10 minutes to prevent burning)
Optional
  • 2 tbsp honey (for drizzling)
  • fresh thyme leaves (for garnish)

Instructions

  • Slice each date lengthwise on one side to create an opening. Remove any pits if they’re still intact.
  • Using a small spoon or piping bag, fill each date with about a teaspoon of softened goat cheese. Don’t overfill—you want them to close neatly around the filling.
  • Wrap each stuffed date with half a slice of bacon, ensuring it’s snug. Secure with a toothpick.
  • Preheat your oven to 400°F (200°C). Arrange the dates on a parchment-lined baking sheet with the bacon seam side down. Bake for 15-20 minutes, flipping halfway, until the bacon is crispy and golden.
  • Let the dates cool for a few minutes. If desired, drizzle with honey and sprinkle with fresh thyme for an added layer of flavor. Serve warm.
