Refreshing, good for you cucumbers!
We love this Japanese Cucumber Salad! It’s only a few ingredients and is healthy and flavorful. It has cucumber, which helps your body get rid of toxins. Rice vinegar is great for your digestive system, skin, and heart health. And finally, sesame seeds are great for lowering cholesterol and helping you burn fat. It’s quick to make and is perfect as a snack or side dish.
Japanese Cucumber Salad
Ingredients
- 1 large english cucumber
- 1/4 cup rice vinegar
- 1 tsp. raw honey
- 1/4 tsp. salt
- 2 tbsp. toasted sesame seeds
Instructions
- peel cucumbers to leave alternating green stripes.
- slice the cucumbers in half lengthwise; scrape the seeds out with a spoon.
- using a sharp knife or food processor, cut into very thin slices.
- place in a double layer of paper towel and squeeze gently to remove any excess moisture.
- combine vinegar, honey and salt in a medium bowl, stirring well to dissolve honey into the vinegar.
- add the cucumbers and sesame seeds; toss well to combine. Serve immediately.
