Maple Roasted Garlic and Goat Cheese

Today, we’re bringing you this Maple Roasted Garlic and Goat Cheese recipe that Alexandra and Shane Cunningham from @thisfamilytree shared! Alexandra’s mom used to make this recipe whenever she would host since it’s such an easy staple that immediately elevates a table!

Perfectly caramelized garlic cloves are delicious on their own, especially when spread on fresh, crusty bread. But pairing it with tangy, roasted goat cheese and juicy tomatoes creates a delicious blend of rich, creamy, and savory flavors.

A note from Alexandra: Whole garlic bulbs can be roasted in clay roasters, aluminum foil packets, or covered oven-proof dishes. The advantage of clay is that it allows the garlic to caramelize and take on sweetness, so that’s what I prefer to use.

Maple Roasted Garlic and Goat Cheese

Ingredients

Roasted Garlic
  • 4 garlic bulbs with large, firm cloves 
  • 3 tbsp olive oil
  • 2 tbsp maple syrup 
  • 1 tsp hot chili oil
  • 1 tsp chili powder 
  • 1 tsp ground cumin 
  • Salt & pepper 
Roasted Tomatoes and Goat Cheese
  • 10-12 oz of grape tomatoes cut in half 
  • 1 tbsp olive oil
  • a few sprigs of fresh basil
  • 4-5 oz of goat cheese
  • 1 fresh baguette, sliced 
  • Salt & pepper 

Instructions

Roasted Garlic
  • Remove most of the papery garlic peel. Cut about a half inch off the top of each bulb to expose the cloves. Place the garlic in the centre of a clay roaster.
  • Slowly heat the oils in a small saucepan. Add the syrup and spices, stirring to moisten them. Drizzle the bulbs with the mixture, making sure to fully coat the exposed cloves. Add salt and pepper to taste. Cover, and place it in a cold oven and set the oven temperature to 375F. Bake for 1 hour, basting the bulbs with the mixture at least twice.
Roasted Tomatoes and Goat Cheese
  • Preheat oven to 375F (pop it in beside the garlic). 
  • Add the tomatoes, olive oil, and S&P to. Small baking dish and toss to coat.
  • Create a space in the middle of the tomatoes and place the goat cheese. Bake 25-30 minutes or until the cheese is lightly browned and tomatoes have wilted slightly. If needed, place under broiler on high for a few minutes. 
To Serve
  • Spread roasted garlic over a slice of fresh baguette, and top with a healthy helping of goat cheese and tomato. Enjoy
