Nothing says summer quite like a delicious chicken salad, and our Sweet and Savory Chicken Salad is a perfect recipe for this timeless classic. This recipe is great for a quick lunch or a light dinner. It’s quick to prepare, and if you have time, let the prepared chicken salad refrigerate for a bit and the flavors pop.
Serve it on multi-grain, sprouted, or wheat bread and top it with arugula for hearty and nutritious meal.
We made this recipe better for you by using only full-fat Greek yogurt and a 50/50 combo of yogurt and mayo. The best part? We couldn’t even taste the difference!
Sweet and Savory Chicken Salad
Ingredients
- ⅓ cup full-fat Greek yogurt (or 50/50 Greek Yogurt and Mayo)
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp lemon juice
- 1 tsp fresh rosemary, chopped
- Sea salt and ground black pepper to taste
- 2 cups cooked chicken, shredded
- 2 stalks celery, small dice
- ¾ cup seedless red grapes, quartered
- 2 green onions, thinly sliced
- Toasted multi-grain bread
- Arugula
Instructions
- In a medium mixing bowl, add the Greek yogurt (or 50/50 yogurt mayo combo), Dijon mustard, honey, lemon juice, rosemary, salt, and pepper. Stir to combine.
- Add the shredded chicken, celery, grapes, and green onion. Fold to combine.
- Refrigerate for 30 minutes or longer for the flavors to meld together.
- Serve on toasted bread, top with arugula and enjoy!
