One-Pot Baked Honey Dijon Chicken

Looking for an easy, no-fuss dinner? Meet our One-Pot Baked Honey Dijon Chicken, a simple yet flavorful dinner that requires minimal effort!

We love that this recipe only calls for seven ingredients, and everything bakes together in one pan (hello, easy cleanup). The honey and Dijon mustard come together to make a rich, creamy sauce that’s perfect with the juicy chicken.

Pair it with some roasted veggies or a fresh salad topped with our Everyday Vinaigrette, and dinner’s done!

One-Pot Baked Honey Dijon Chicken

Ingredients

  • 2-3 tbsp olive oil
  • 8 chicken thighs or other pieces (skin on) 
  • ¼ cup honey
  • ¼ cup dijon
  • 1 cup sour cream
  • 1 cup chicken stock
  • ½ tsp sweet paprika
  • 3 cloves of garlic, crushed
  • Chopped parsley (for garnish)

Instructions

  • Preheat oven to 350 F degrees.
  • Heat oil in an ovenproof skillet or brasier with a lid over medium heat. Season the chicken pieces with salt and pepper, and brown them well on all sides. If you are not using an ovenproof vessel, transfer the browned pieces to a casserole dish in a single layer. Place the chicken skin side down in the skillet or casserole dish.
  • Whisk together remaining ingredients in a bowl and pour over chicken. 
  • Bake for 30-40 minutes, basting occasionally and flipping the chicken a couple of times, until the chicken is cooked through and the sauce has reduced and thickened slightly.
  • Top with chopped parsley and serve.
