Overnight Chocolate Chia Seed Pudding

Who doesn’t love a no-bake dessert, especially with summer approaching? This Overnight Chocolate Chia Seed Pudding couldn’t be easier—it’s foolproof! Not only is it vegan, but it’s also packed with fiber from chia seeds, making it a delicious and nutritious treat you’ll want to make again and again.

WOT are the other health benefits of chia seeds: Chia seeds are a nutritional powerhouse packed with essential nutrients like fiber, protein, omega-3 fatty acids, and various micronutrients such as calcium and magnesium. High in antioxidants, they also help combat oxidative stress and reduce inflammation.

Overnight Chocolate Chia Seed Pudding

Ingredients

  • ¼ cup unsweetened cocoa powder
  • ¼ cup maple syrup
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of Kosher or sea salt
  • cups unsweetened almond milk 
  • ½ cup chia seeds

Instructions

  • In mixing bowl add the cocoa powder and gently whisk, this will help to smooth any lumps in the cocoa powder.
  • Add the maple syrup, cinnamon, vanilla extract, and pinch of salt. Gently whisk to combine all ingredients. 
  • Add ½ cup of the almond milk at a time to the chocolate mixture. Gently whisk to combine while you are adding the almond milk. 
  • Add the chia seeds and gently whisk to combine. 
  • Refrigerate the pudding. After about one hour, stir the pudding and return to the refrigerator.
  • The pudding can rest overnight or a minimum of 5 hours until it has a pudding consistency. 
  • Top with your favorite whipped topping and serve.
