Arugula Blueberry Avocado Salad with Mint Lime Vinaigrette

All the fresh flavors of summer in one delicious salad!

If we had to put summer in a bowl, our Arugula Blueberry Avocado Salad, topped with a zesty Mint Lime Vinaigrette, would be it. It’s one of those salads you can eat over and over again all season long.

This simple yet vibrant dressing, our first to feature fresh mint this year, perfectly complements the robust flavors of arugula and creamy avocado. 

Let’s be honest, few herbs remind us of summer quite like fresh mint! And depending on your location, you may have an abundance of this hearty herb in your garden already.

Arugula Blueberry Avocado Salad with Mint Lime Vinegarette

Servings 4

Ingredients

Vinaigrette
  • cup olive oil
  • 1 lime, juiced
  • 1 tbsp maple syrup 
  • 2 tbsp finely chopped fresh mint
  • ¾ tsp salt
  • Pepper to taste
Salad
  • 10 oz dark greens, such as arugula and spinach
  • ½ cup fresh blueberries
  • 1 ripe avocado, diced
  • ½ cup cucumber, diced
  • ½ cup feta cheese, crumbled 
  • ¼ cup crushed pistachios or your favorite nut (Optional)

Instructions

  • In a small bowl, whisk all the vinaigrette ingredients together. Pour into a jar or other vessel and refrigerate until ready to use. This dressing tastes best if used on the same day. 
  • When ready to serve, add just the greens into a large serving bowl. 
  • Stir the dressing and lightly dress the greens, using about half the dressing amount, and toss to coat. 
  • Top the salad with the blueberries, avocado, cucumber, feta, and crushed pistachios. 
  • Drizzle the remaining dressing over the top of the salad and serve.
