Viral Crispy Chickpeas

These could be your new favorite salad topper and snack!

Today, we’re bringing you this Viral Crispy Chickpea recipe you may have seen on social media! Whether you keep it simple with sea salt or spice things up with Greek seasonings or curry powder, these crispy chickpeas did not disappoint.

These tasty bites take less than 30 minutes to prepare and can be stored in the fridge, making them a convenient, ready-to-go addition to your salads or a delicious snack. We paired them with our new Kale and Romaine Caesar Salad, which was delicious!

WOT Tip: When using canned beans, be sure to rinse them thoroughly. Rinsing removes excess sodium and the starchy liquid they’re packed in, which can affect the texture and taste of your dish. Plus, it helps reduce the gassiness some people experience from beans.

Viral Crispy Chickpeas

Ingredients

  • 2 15 oz cans of chickpeas, rinsed really well and drained
  • 1 tbsp olive oil
  • ½ - 1 tsp sea salt or Greek seasoning, curry powder or smoked paprika (season to taste)

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper. 
  • Spread the rinsed and drained chickpeas onto the parchment paper in a single layer.
  • Roast the chickpeas for 20 minutes, or until golden brown and crisp. Shake the pan every 10 minutes to ensure even browning and optimal crunch. 
  • Remove the pan from the oven, pick up the parchment paper, and pour all the chickpeas into a small bowl. (Save the parchment paper.) Drizzle the chickpeas with olive oil and season with sea salt or Greek seasonings. Stir to combine, then return the seasoned chickpeas to the parchment paper on the sheet pan and roast for approximately 10 more minutes or until brown and crispy. 
  • Pour into a mixing bowl and top your salad.
  • Cool and store in the refrigerator for four days.
