GF Oat Flour Chocolate Chip Cookies

Servings 8

Ingredients

  • cup butter, melted
  • cup coconut sugar or brown sugar
  • cup oat floor
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 2 tbsp water or brewed coffee
  • ¼ tsp Kosher or sea salt
  • cup dark chocolate chips 

Instructions

  • Preheat oven to 350℉ and line your baking sheet with parchment paper.
  • Add melted butter to a bowl and add sugar, water, and vanilla, and whisk until smooth.
  • In a small mixing bowl, combine the flour, baking soda, and salt. Slowly stir the dry ingredients into the butter mixture. Use a wooden spoon to combine. 
  • Fold in chocolate chips.
  • Divide the mixture into eight portions and roll each piece into a ball. 
  • Space out evenly on the baking sheet and slightly flatten.
  • Bake for 12 minutes or until golden. These cookies will not spread much when baking. 
  • Let cool for 10 minutes before removing from the parchment paper.
