Rob Floyd’s Apples Delight

We’re so grateful to Rob Floyd for joining us at our 2025 WOT Event in Austin and for sharing his newest book, Sip at Sea, with our community. His creativity, warmth, and approach to mixology made the event feel extra special, and we’ve been having so much fun trying the recipes at home. One of our favorites is his Apples Delight cocktail, a seasonal, slightly sweet, perfectly spiced drink that feels made for Thanksgiving gatherings.

If you’re hosting, heading to a Friendsgiving, or just want something festive to sip while you cook, this cocktail is a must try. Rob Floyd’s Apples Delight

Equipment

  • Glass: Snifter 

Ingredients

  • ½ small apple, cut into small chunks 
  • oz Calvados
  • ½ oz fresh lemon juice
  • ½ oz honey syrup
  • ¼ oz St. Germain (Elderflower liquor)
Float
  • ¼ oz Port

Instructions

  • In a mixing glass, muddle the apple pieces, then add Calvados, lemon juice, honey syrup, and St. Germain. Add ice and shake. 
  • Add fresh ice to a snifter glass, then strain the mixture over it. 
  • Using the back of a bar spoon, top with ¼ oz of port, and slowly pour to create the float. Tip: The darker the port, the greater the color contrast in the float.
