Our Roasted Red Pepper Feta Dip is one of those recipes you make once and then keep finding excuses to make again. Roasted red peppers bring sweet, sunny flavor, feta adds that salty tang, and a squeeze of lemon pulls it all together into a creamy, scoopable dip you’ll want on repeat.

Keep it in the fridge for easy snacking with crunchy veggies, serve it with warm pita when friends come over, or spread it on sandwiches and wraps to instantly level them up.

It also works as a quick sauce for grain bowls or roasted veggies if you have leftovers, which is rare.
Roasted Red Pepper Feta Dip
Ingredients
- 8 oz feta cheese, cubed or crumbled
- 1/2 cup drained roasted red bell peppers, sliced
- 1 garlic clove, minced
- 1/2 lemon, juiced
- 1 tbsp extra-virgin olive oil
- Cayenne pepper
- Drizzle of Olive Oil
Instructions
- In the bowl of a food processor, add in the feta, drained roasted red bell peppers, garlic, lemon juice, and olive oil.
- Process on high until the mixture comes together. Rove the lid and scrape down the side of the bowl, and process again until smooth. Add more olive oil if needed to achieve your desired consistency.
- Serve with sliced vegetables or pita chips.
- Store in the refrigerator for up to one week.
