A delicious and gluten-free main that you must try!
We love this recipe for Almond-Crusted Chicken Breast with Spinach for many reasons, but first of which is because it is crusted chicken and it’s better for you!! It also happens to taste delicious and not use breadcrumbs at all to achieve a tasty golden crust.
If you’re feeling board with regular old grilled chicken but want to keep things healthy, this dish is it.
Almond-Crusted Chicken Breast with Spinach
Ingredients
- ½ cup almonds toasted
- 3 tbsp. extra virgin olive oil
- 1 garlic clove
- coarse salt and freshly ground pepper
- 2 chicken breast halves, boneless and skinless
- 3 oz. baby spinach
- lemon wedges for serving
Instructions
- Preheat oven to 425 degrees F.
- Pulse toasted almonds, olive oil, garlic, and ½ teaspoon salt into a coarse paste in a food processor.
- Season chicken with salt and pepper.
- Rub the almond paste over the chicken, dividing the mixture evenly.
- Roast chicken on a baking sheet until cooked through (15-18 minutes).
- Transfer to a cutting board and slice.
- Serve chicken over baby spinach with lemon. wedges.
