Apple Tartlets with Herb Infused Honey

These tartlets have the natural sweetness of ripe apples, which pairs perfectly with the herb infused honey and flaky puff pastry. While we’ve included our homemade herbed-infused honey for an extra layer of sophistication, feel free to use regular honey if you prefer.

WOT we love about this recipe: It’s easy to make, they look impressive and if the little tartlets don’t get you feeling all the fall vibes we aren’t sure what will. They are the perfect seasonal dessert.

Apple Tartlets

Servings 6

Ingredients

  • 2 rectangular sheets of frozen puff pastry, approx. 4”x8” (thawed for 10 minutes)
  • 2 honeycrisp apples halved, cored, and thinly sliced
  • herb honey drizzle 

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut each sheet of puff pastry into 3 pieces to yield a total of six pieces of puff pastry.
  • Leaving the skin on the apple and using a mandolin, thinly slice the apple halves.
  • Place the thinly sliced apples onto each piece of the puff pastry, overlapping each slice of apple. Place onto a baking sheet.
  • Drizzle with the herb-infused honey and bake in the oven for 10 minutes or until puff pastry is golden brown.

Herb Infused Honey

Ingredients

  • 8 oz honey
  • 3 tbsp fresh thyme or rosemary, washed with stems

Instructions

  • Place a small open empty jar in a skillet with 1-2 inches of water surrounding it. Pour the honey into the empty jar and heat until water begins to steam in the skillet. Do not boil.
  • Place the fresh thyme or rosemary into the jar and gently push the herbs down into the honey if needed.
  • Turn the heat off on the skillet, let the herbs sit in the honey, and steep for 10 minutes.
  • Carefully remove the jar from the hot water and towel dry the outside of the jar.
  • Cover the jar with its lid, place it in a sunny window, and allow it to sit for 1-2 days.
  • After the honey has sat for your desired number of days, use a fork to remove the herbs from the honey.
  • Keep the honey in a cool, dark place for one month.

Now like we said, if you don’t have time to infuse your honey don’t fret. You can use regular honey and these tarts will still be perfectly delicious.
