Banana Chocolate Chip Oat Bars

Ingredients

  • 2 ripe bananas 
  • 2 cups rolled oats
  • ½ cup nut butter
  • ¼ cup maple syrup
  • 3 tbsp coconut oil
  • 2 tbsp ground flax
  • ½ cup chopped nuts
  • 2 tsp vanilla
  • ¼ tsp salt
  • cup chocolate chips

Instructions

  • Preheat your oven to 350°F. Line an 8-inch square pan with parchment paper, allowing some overhang for easy removal.
  • In a large bowl, mash the bananas thoroughly until smooth.
  • Add the remaining ingredients to the mashed bananas and stir until the mixture is well combined.
  • Pour the batter into the prepared pan and spread it evenly. If desired, sprinkle additional chocolate chips or toppings over the surface.
  • Bake in the preheated oven for 30 minutes, or until the edges are golden brown and the center is set. Start checking for doneness around the 25-minute mark by inserting a toothpick into the center; it should come out clean or with only a few moist crumbs.
  • Let the baked mixture cool completely in the pan before lifting it out using the parchment paper. Slice into squares and enjoy!
