We perfected this recipe just in time for Thanksgiving!
If you’ve been looking for a healthier alternative for your gravy that doesn’t compromise on flavor, this recipe is for you! Our Better For You Mushroom Gravy is not only delicious and healthier, but it can easily be made ahead of time and warmed on the stovetop when you’re ready to enjoy.
Note: This gravy has a nice consistency and flavor, but it is not super thick. If you like your gravy very thick, you can reduce the amount of vegetable stock.
Better For You Mushroom Gravy
Ingredients
- 2 tbsp extra-virgin olive oil
- ½ Vidalia onion, finely chopped
- 8 oz white mushrooms, finely chopped
- Kosher salt
- Freshly ground black pepper
- 1 tsp chopped thyme
- 1 tsp chopped rosemary
- 3 tbsp all-purpose flour
- 3 cups vegetable stock, divided
Instructions
- Heat olive oil in a small saucepan over medium heat. Add onion and sauté until soft, 6 minutes. Stir in mushrooms and herbs and season with salt and pepper. Cook until soft, about 5 minutes more.
- Add flour, stir to combine, and cook for 1 minute.
- Gradually pour in 2 cups of vegetable stock and whisk to combine.
- Bring to a simmer and cook for 5-10 minutes. This will help all the flavors to meld into the gravy and give it a rich flavor, and the gravy will also thicken.
- If the mixture is too thick, gradually add the vegetable stock reserved.
- Season to taste and serve warm.
- *If making ahead of time and refrigerating until ready to use, you might need a bit more vegetable stock to smooth the gravy when heating.
