BFY Flaxseed Chocolate Chip Muffins
Ingredients
- 1 cup whole wheat flour
- ½ cup ground flaxseeds
- 1 tsp baking soda
- ¼ tsp salt
- 2 eggs
- ½ cup unsweetened applesauce (or mashed banana)
- ⅓ cup maple syrup (or honey)
- ¼ cup melted coconut oil (or olive oil)
- ½ cup chocolate chips
Instructions
- Preheat oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, flaxseeds, baking soda, and salt.
- In another bowl, mix eggs, applesauce, maple syrup, and melted coconut oil.
- Combine the wet and dry ingredients, stirring until just mixed.
- Fold in the chocolate chips.
- Divide batter into muffin cups, filling each about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before enjoying!
