Elevate your Super Bowl party appetizer game with Reuben Egg Rolls!
If you love a good Reuben sandwich, get ready to take it to the next level with these irresistible Reuben Egg Rolls! Reuben Egg Rolls
Ingredients
- 10 egg roll wrappers
- ½ lb thinly sliced deli corned beef
- 1 cup sauerkraut, well-drained
- 5 Swiss cheese, cut in half
- ⅓ cup Greek plain yogurt
- 2-3 tbsp ketchup
Instructions
- Place an egg roll wrapper on parchment, with the point facing you to look like a diamond shape.
- Take ½ slices of Swiss cheese, break it into small pieces, and place them in the center of the egg roll wrapper.
- Add 1 slice of corned beef, maybe a little more, depending on how large the slices are.
- Top with a dollop of sauerkraut.
- Using your index finger. Wet the tip of your finger in a bit of water and run it over all the edges of the egg roll wrapper.
- Bring the point of the egg roll wrapper facing you over the sauerkraut, then bring in the left side and then the right side resembling an envelope. Roll the egg roll towards the top point and gently squeeze it into place. Set aside as you finish the batch.
- For the BFY Russian Dressing, combine the plain Greek yogurt with ketchup. Stir well to combine and taste. Add more ketchup if desired.
- To cook in an air fryer: Spray the basket or basket liner with avocado oil. Place 2-3 egg rolls inside the basket and lightly spray the top with avocado oil. Cook at 400 degrees for 6 minutes. Flip the egg rolls and cook for another 6 minutes.
- These egg rolls can also be fried in a traditional fryer. Cook until golden brown, drain, and serve.
- To serve: Slice in half and serve with BFY Russian Dressing.
