Black Bean Salsa with Pomegranate Seeds and Avocado

At this time of the year, we love to keep things festive and come up with some simple seasonal recipes. Recipes that are easy to make and put everyone in the spirit of the season. This salsa is so easy to make and is seriously delicious. We highly suggest adding it to your holiday party menu!

Black Bean Salsa with Pomegranate Seeds and Avocado

Servings 6

Ingredients

  • 1 15 oz. can black beans, drained and rinsed
  • 2 cup pomegranate seeds
  • 1 small jalapeño, diced and seeds removed
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 large avocado, diced, use 2 avocados if they are small
  • 2 tbsp. fresh lime juice
  • salt and freshly ground pepper, to taste
  • tortilla chips for serving

Instructions

  • In a medium bowl, combine black beans, pomegranate seeds, jalapeño, onion, cilantro, avocado, lime juice, salt, and pepper. Gently stir.
  • Serve with tortilla chips.
  • ***Note -This salsa is best the day it is made.
