Brussels Sprouts with Whipped Hot Honey Feta

Today, we’re bringing you a delicious and seasonal recipe from @cherylshealthylife! Meet her Brussels Sprouts with Whipped Hot Honey Feta, a savory combination of creamy whipped feta topped with caramelized Brussels sprouts and shallots. This recipe is perfect to bring to your next spring gathering or just enjoy by yourself.

Tip: Cheryl suggests steaming your Brussels sprouts for a few minutes before roasting them, but that’s optional!

Brussels Sprouts with Whipped Hot Honey Feta

Equipment

  • Food processor or blender

Ingredients

For the Brussels Sprouts
  • 1 lb Brussels Sprouts, washed
  • 1 Shallot, sliced
  • 1 tbsp Olive oil
  • Hearty pinch of garlic powder and ground parsley
  • Salt and pepper to taste
For the Whipped Hot Honey Feta
  • 8 oz Block of feta cheese
  • 3 tbsp Plain yogurt
  • Zest and juice from ½ a lemon
  • 1 tbsp Hot honey or you can use regular honey with some chili powder
Garnish
  • Sliced almonds
  • Chili onion crunch
  • Honey honey
  • Lemon zest
  • Flake salt

Instructions

For the Brussels Sprouts
  • If desired, steam Brussels sprouts for 2-3 minutes, then pat them dry.
  • Cut off the ends of the Brussels sprouts and cut them in half.
  • Place the Brussels sprouts on a parchment-lined baking sheet, along with the shallots, olive oil, and spices.
  • Bake at 425 degrees F for 15-25 min or until they are caramelized. 
For the Whipped Hot Honey Feta
  • Put all the ingredients into a food processor and combine until smooth, about 1 min, scraping down the sides.
To Assemble
  • Add the feta to a serving platter, then top with the Brussels sprouts and shallots.
  • Finish with the garnishes of your choice.
