Erica McConaughey’s Chunky Guacamole

Guacamole is a favorite in the McConaughey house (isn't it everyone's favorite?!).

Recently, Camila stopped by Delish headquarters in New York to teach them her favorite family recipe, courtesy of her sister-in-law, Erica.

We love this guacamole because it is nice and chunky (don’t knock it till you try it)! It also calls for cucumber as a surprising and delicious ingredient. We are willing to bet that this will become your new favorite way to make guacamole, too.

Erica McConaughey's Chunky Guacamole

Ingredients

  • 4-6 Haas avocados
  • 1 cucumber, chopped into small or medium pieces
  • 1 small cup of cherry tomatoes, sliced down the middle
  • 1 small red onion, roughly chopped.
  • 1 jalapeño, chopped, membrane removed
  • 1 lemon, juiced
  • 1 lime, juiced
  • garlic powder to taste
  • salt and pepper to taste
  • optional: chopped fresh cilantro to taste

Instructions

  • Mash the avocados on the cutting board then place in a bowl. Add all other ingredients and slowly mix so it stays somewhat chunky.
  • You may need to add more lemon or lime, depending on your tastes.
  • To add a little more spice, add some minced fresh garlic.
