The zesty dressing, which can be prepared beforehand, is the real showstopper of this recipe — It perfectly complements the savory chicken and crisp vegetables. For maximum freshness and flavor, assemble the salad just before serving and enjoy a meal that is as satisfying as it is nutritious.
Crunchy Asian Chicken Salad
Ingredients
- 6 cups shredded green cabbage, about 1 small head
- 2 cups shredded red cabbage, about 1/2 small head
- 1 large carrot, shredded
- 1 jalapeno pepper, thinly sliced
- ¼ cup chopped fresh cilantro
- ¼ cup chopped green onions + 2 tablespoons for garnish
- ¼ cup crushed roasted peanuts + 2 tablespoons for garnish
- ⅓ cup crispy wonton strips + extra for garnish
- 1 cup shredded rotisserie chicken
- 2 tbsp soy sauce or tamari
- 4 tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tbsp honey
- 2 tsp grated fresh ginger
- 2 tsp garlic, minced
- Green onion
- Crushed roasted peanuts
- Wonton strips
Instructions
- Assemble the dressing. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated fresh ginger, and minced garlic. Set aside.
- In a large bowl, combine the shredded cabbage, carrot, pepper, cilantro, green onions, peanuts, and wonton strips.
- Lightly dress the salad ingredients in a large mixing bowl. Toss until lightly coated. Add more dressing as needed to taste.
- Plate the salad, top with the shredded chicken, and garnish with the extra green onions, crushed peanuts, and wonton strips. Serve immediately.
