There’s nothing quite like the warm, cheesy goodness of Pão de Queijo, Brazil’s irresistible cheese bread. These bite-sized delights have a perfectly crisp exterior and a soft, chewy center, making them a favorite snack or breakfast staple in Brazilian homes.
Naturally gluten-free, thanks to tapioca flour, they’re both light and satisfying.
Whether enjoyed fresh out of the oven with coffee or as a tasty side, this simple recipe will bring a touch of Brazil to your kitchen.
Easy Brazilian Cheese Bread (Pão de Queijo)
Equipment
- Mini muffin pan
Ingredients
- 1 large egg, room temperature
- ⅓ cup extra virgin olive oil, plus more for greasing the pan
- ⅔ cup milk
- 1½ cups tapioca flour
- ½ cup packed grated cheese, we used white cheddar
- ¾ tsp salt
Instructions
- Preheat the oven to 400°F.
- Brush a small amount of olive oil around the insides of each well of a non-stick mini muffin tin. *Use a spatula to scrape down the sides of the blender so that everything gets blended well.
- Allow the batter to rest for about 20-30 minutes, and then give it a quick blend.
- Pour the batter into the prepared muffin tin, leaving about a 1/8” inch from the top.
- Bake at 400°F in the oven for 15-20 minutes until all puffy and nicely browned.
- Remove from the oven and let cool on a rack for a few minutes.
- Serve immediately or store in an air-tight container in the refrigerator for up to one week.
