Beet Parsley and Feta Salad
Ingredients
- 2 15oz cans of whole beets, drained
- 3 tbsp extra virgin olive oil
- 2 heaping tablespoons parsley, chopped
- ⅓ cup Feta cheese, crumbled, divided
- Kosher or sea salt
Instructions
- Quarter the whole beets and place in a mixing bowl.
- Season the beets with salt, drizzle with the olive oil, and add the chopped parsley.
- Toss to combine.
- Add all but a tablespoon of the feta cheese and toss again. Taste and season with more salt if needed.
- Top with remaining feta and serve.
