Easy Chicken Chili Soup

- Dutch Oven
Ingredients
- 1 large onion, chopped
- 3 tbsp. olive oil
- 2 cups chicken broth
- 1 rotisserie chicken, meat removed and cut up
- 2 15 oz. cans cannellini beans, rinsed and drained
- 1 11 oz. can white corn, drained
- 2 4 oz. cans chopped green chiles
- 2 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. hot pepper sauce
- Optional Toppings: sliced jalapeno, chopped red onion, chopped cilantro, tortilla strips, cheese, and fresh lime wheel.
Instructions
- In a Dutch oven, sauté onion in olive oil until translucent. Add chicken broth and bring to a boil.
- Add the chicken, beans, corn, green chile, cumin, chili powder, salt, pepper, and hot pepper sauce. Cook on a slow simmer for 25-30 minutes.
- If desired, add toppings of your choice.
