Meet your new grab-and-go breakfast obsession: Gluten Free Crispy Hashbrown Ham Bites! They’re golden on the outside, cheesy in the middle, and packed with that classic ham-and-cheese comfort, just made gluten-free.

Perfect for busy mornings, meal prep, or an easy brunch add-on, these bites bring all the crunchy, savory goodness without frying. Bonus: they’re just as good warm from the oven as they are reheated the next day.


Gluten Free Crispy Hashbrown Ham Bites
Ingredients
- 3 cups potatoes, grated
- 1/4 cup butter, melted – plus a little extra from greasing the muffin pans.
- 2 eggs, beaten
- 1 cup shredded cheddar cheese
- 3/4 cup ham, finely diced
- 1 tbsp almond flour for GF or all-purpose flour if not GF sensitive
- Kosher salt
- Black pepper
Instructions
- Preheat oven to 400 degrees F.
- Butter two 12-hole muffin pans.
- Grate potatoes, then use your hands to squeeze out any excess liquid and drain. Place the drained potatoes in a large bowl—Season well with kosher salt and black pepper.
- Add the melted butter and beaten egg, stir to combine.
- Add the shredded cheese and ham, and fold through the almond flour or all-purpose flour.
- Spoon the mixture into the prepared muffin pans and bake for 20-25 minutes, until golden and crispy.
- Use a spoon or spatula to release bites from the muffin pans and serve immediately.
- They can also be made ahead of time and frozen or refrigerated until ready to warm in a 350-degree oven for 10 minutes.
