Peanut Butter Banana Nice Cream By Yummy Mummy Kitchen

When we came across this recipe from Yummy Mummy Kitchen by Marina Delio, we knew we had to try it! It’s a better-for-you version of a delicious summer ice cream that everyone is sure to love. Enjoy this recipe, and let us know if you make it!

WHAT IS NICE CREAM?

Banana nice cream is like ice cream, only nicer. Nicer on our bodies, the planet, and cows. We have made a few nice cream recipes in the past. If you don’t like bananas, we recommend this Pineapple Vegan Ice Cream or this Mango Vegan Ice Cream, which are also both made in the food processor. Nice cream is an easy treat for kids to make, or help make, depending on age. While it feels like a special ice cream treat, it’s actually made with bananas. Camila admits she is not a huge fan of bananas, typically. The great thing about bananas, though, is that they make smoothies and nice creams so very creamy.

CAN YOU MAKE NICE CREAM WITHOUT A FOOD PROCESSOR?

If you don’t have a food processor, nice cream can be made in a high-powered blender like a Vitamix or Blendtec. You may need a bit more liquid to turn the blender, however.

HOW TO MAKE NICE CREAM

There are only two required “ingredients” for nice cream: bananas and a food processor. Peel, slice, and freeze the bananas. I keep frozen bananas on hand at all times for smoothies, so we are always ready to make nice cream at a moment’s notice. If you can’t wait for your banana slices to freeze, you can find bags of frozen banana slices in the frozen fruit section of many grocery stores. We have found them at Sprouts in the past.

Blend the frozen banana slices in the food processor until they turn into a smooth and creamy treat resembling soft serve ice cream. You many need to stop the processor and move the frozen bananas around with a rubber spatula. This takes about 3-5 minutes. Nice cream is naturally sweet from the bananas, but you may like adding a little maple syrup, coconut sugar, or a couple of pitted dates to sweeten it up even more.

Nice cream can be eaten immediately or frozen for later. If your nice cream has been frozen, let it sit out at room temperature to soften.

NICE CREAM FLAVORS

Banana nice cream is, of course, banana flavored, but you can add other ingredients to change it up to your liking. Here are some ideas:

Add other frozen fruit like berries or mango

Add a cup of dairy-free yogurt

Chocolate Nice Cream: add 1/3 cup cocoa powder

Peanut butter goes so well with the banana that this nice cream flavor works beautifully. My daughter likes it best with chocolate chips. Just like with “real” ice cream, a pinch of salt really brings out the flavors. Have you tried Nice Cream?

Equipment

  • Food Processor

Ingredients

  • 4 bananas, peeled, sliced, and frozen
  • 1/4 cup almond, soy, or coconut milk
  • 1/2 cup peanut butter (creamy or crunchy, unsweetened)
  • pinch of sea salt
  • 1 tbsp. maple syrup, or coconut sugar to taste (optional)
  • 1/4 cup mini dairy-free chocolate chips

Instructions

  • Place the frozen banana slices and milk in the bowl of a food processor. Blend and pulse until just smooth, stopping to scrape down the sides with a rubber spatula occasionally. Don't over-blend.
  • Add the peanut butter, a pinch of salt, and optional sweetener to taste and pulse to combine. Stir in chocolate chips.
  • Enjoy immediately as a soft serve or transfer to a freezer container for later. Once frozen solid, let nice cream sit at room temperature for about 30 minutes to soften before eating.
